Hi, I'm Lisa. I share quick and easy healthy meals because I believe you can eat delicious food and love your body too. The Green Goddess salad dressing is trending, and I wanted to create a wrap to complement it. While you can buy bottled Green Goddess dressing, making it at home is easy and rewarding.
Homemade Green Goddess Dressing
To make the dressing, blend the following ingredients until smooth:
- 1 cup baby spinach
- 1 cup fresh basil
- 1/3 cup Parmesan cheese
- 1/4 cup cashews
- 1/4 cup olive oil
- 3 tablespoons fresh lemon juice
- 2 tablespoons white wine vinegar
- 2 garlic cloves
- 1 small shallot (or a small amount of onion)
- 1 teaspoon salt
Green Goddess Wrap Ingredients
For the wrap, you'll need:
- 3 cups finely chopped green cabbage
- 1 1/2 cups finely chopped cucumber
- 3/4 cup finely chopped green onion
- 1/4 cup toasted pepitas (pumpkin seeds)
- 6 spinach flour tortillas (I recommend Mission wraps)
- 1 avocado, mashed
- Sliced hard-boiled eggs
- Sliced radishes
Assembly
1. Combine the cabbage, cucumber, green onion, and pepitas in a bowl.
2. Add 3/4 cup of your Green Goddess dressing and mix well.
3. Warm the tortillas in the microwave for 30 seconds to make them more pliable.
4. Spread a sixth of the mashed avocado onto each tortilla.
5. Top with hard-boiled egg slices, radish slices, and the cabbage salad mixture.
6. Roll up the tortillas tightly to form wraps.
Each wrap has approximately 368 calories, 26 grams of fat, 26 grams of carbs, and 10 grams of protein. For added protein, include some chicken.
